Step 1
How to make simple homemade shortbread cookies with vegetable oil in the oven? Prepare the ingredients. Use refined, neutral oil (odorless), otherwise the cookies may turn slightly bitter. You may need more or less flour - judge by the dough. Preheat the oven to 180°C (356°F).
Step 2
Place the egg in a glass of warm water for 3 minutes so it warms up - sugar dissolves faster in a warm egg. Remove, pat dry, and crack into a bowl. Add all the sugar (you can reduce it to taste). Beat the egg and sugar with a mixer on high speed until pale and fluffy.
Step 3
Pour the vegetable oil into the egg mixture. Mix again with the mixer until smooth. You can do these steps with a whisk, but a mixer is faster.
Step 4
Add baking powder and a pinch of salt to the flour and stir. Salt enhances flavor - don’t be afraid to add it to sweet baking. Sift the flour into the egg-oil mixture. Don’t add all the flour at once: add most of it first and add the rest as needed. This helps keep the dough soft and prevents over-flouring.

Mix the dough with a spatula or spoon. If it’s too runny, add more flour. The dough should come together into a ball but remain soft. While mixing, you can add chopped nuts or chocolate pieces, and also flavorings like vanilla, cinnamon, or lemon zest.
Step 6
Line a baking sheet with parchment paper. Scoop dough with a spoon and roll into a ball about the size of a walnut. Place the balls on the paper and flatten slightly.
Step 7
Bake at 180°C (356°F) for 15-20 minutes. Exact time depends on your oven. Watch the cookies - they should turn lightly golden. Don’t bake too long or they’ll become hard.
