Semolina Cake with Bananas on Kefir

Fluffy, soft, with boiled condensed milk and fresh fruit! Semolina cake with bananas on kefir is an affordable bake from simple ingredients. The main feature is that bananas are not baked with the batter but added fresh with condensed milk as a layer between the baked cakes.

Preparation
Step 1
Adjust the sugar amount to your taste. Kefir with 2.5%-3.2% fat works best. The richer the kefir, the tastier the cake will be.

Mix baking soda into room-temperature kefir. Many small bubbles will appear on the surface.

In a bowl, combine kefir, semolina, and sugar. Mix thoroughly.

Leave at room temperature for 1.5-2 hours to let the semolina swell.

Melt the butter and let it cool.

Add the melted butter to the batter and sift in the flour.

Mix the batter thoroughly until smooth. It should be thick and not runny.

Grease a rectangular baking dish (about 5×10 in / 13×25 cm) with butter and sprinkle with semolina. Pour in the batter and smooth it out. Bake in a preheated oven at 350°F (180°C) for about 1 hour, until a toothpick comes out clean. Baking time may vary by oven.

Remove the cake from the pan and cool it. Then cut it in half lengthwise.

Prepare the filling. You can replace boiled condensed milk with regular. Use store-bought or homemade boiled condensed milk. Choose ripe but not overripe bananas; they should be bright yellow.

Peel the bananas and slice them into moderately thick rounds.

Spread boiled condensed milk on the cut sides of both cake layers.

Arrange the banana slices over the condensed milk on the bottom layer.

Place the second layer on top, restoring the cake's shape. Let it sit for 20 minutes to soak.
