Seafood Pilaf

Preparation
Step 1
For the pilaf, you can use shrimp, mussels, squid, or octopus. I used a frozen seafood mix this time. Place the seafood in a colander and rinse under cold water to remove the ice coating. Let it thaw on a large plate.

Heat a little vegetable oil in a deep pot or Dutch oven. Add the onion and cook for a couple of minutes, stirring occasionally.

Add the carrot to the pot. Fry everything on high heat for about 5 minutes. Stir occasionally to prevent burning.

Add the seafood mix to the pot. Cook for a couple of minutes on high heat.
Step 6
Season with salt, pepper, and your favorite spices. A fish seasoning mix works well. I also used 0.5 tsp of turmeric, which gives the pilaf a rich color.
Step 7
Rinse the rice several times until the water runs clear. Add it to the pot and mix gently.
Step 8
Pour hot water over the ingredients in the pot. How much water? For one portion of rice, use 1.5 to 2 portions of water. For example, for one cup of rice, I used one and a half cups of liquid. The rice should be covered with water by about 1-1.5 inches. Cover the pot with a lid and cook on low heat until the rice is fully cooked. This took about 15-17 minutes for me.
Step 9
Once the pilaf is ready, stir it again. When serving, offer each person finely chopped fresh herbs and ground black pepper.
