Step 1
How do you make seafood pasta in cream sauce? Prepare the necessary ingredients. You can use several types of seafood separately or a ready-made seafood mix. I used shrimp and mussels. It is best if the cream is at room temperature. Choose pasta made from durum wheat, as it keeps its shape better and does not overcook as easily.
Step 2
Thaw the frozen seafood in advance at room temperature or in the refrigerator. The seafood should thaw gradually, without sudden temperature changes, so it does not lose its flavor. Rinse the seafood under cold water and place it in a sieve or colander to drain. Dry the seafood very well to remove as much excess moisture as possible.
Step 3
Peel the shrimp, removing the heads and shells. Make a small cut along the top of each shrimp to remove the intestinal vein. If needed, rinse the shrimp again and dry them well.
Step 4
The pasta should be cooked in a large amount of water so it does not stick together, so use a pot of suitable size. Cook the pasta in salted boiling water until al dente, meaning slightly undercooked.

Drain the pasta in a colander so the water runs off.

You can prepare the seafood sauce at the same time as the pasta. Peel the garlic and slice it thinly. In a skillet, lightly heat the olive oil and butter. Cook the garlic over medium heat for 1 minute so the oil becomes fragrant. Remove the garlic from the skillet. You can discard it, we will not need it anymore.

Add the seafood to the skillet. Cook it over medium heat, turning occasionally, for about 3 minutes until lightly browned. There should be no excess moisture in the seafood. Otherwise, it will first stew and only then begin to fry, which will increase the cooking time. That must be avoided, because the delicate seafood will become tough and rubbery.

Pour the cream into the skillet and increase the heat.

Add the aromatic herbs and a little salt. You can also add ground black pepper. Bring the sauce to a boil, then reduce the heat.

Simmer the sauce over low heat for 5 minutes, stirring occasionally. My shrimp and mussels were large. If your seafood is smaller, 2-3 minutes of simmering will be enough.

Grate the cheese on a fine grater. Set aside a little of the cheese for serving.

Add the grated cheese to the sauce and stir. The cheese will make the sauce thicker and give it a richer flavor. When adding salt to the sauce, take into account the saltiness of the cheese.

Keep the sauce over low heat until the cheese melts.

Add the cooked pasta to the skillet with the sauce and mix. Warm the pasta with the sauce for 1 minute and serve immediately.
