School Cafeteria Pizza

Delicious, fluffy, juicy, budget-friendly, for the whole family! School pizza is a dish many remember from childhood. At school, kids line up for it during breaks. Made at home, it’s much tastier, and you can choose the toppings to your liking.

Preparation
Step 1
Prepare the ingredients for the dough. Use natural butter (not margarine). Take it out of the fridge in advance to soften. Also, take out the egg to warm. Instead of dry yeast, you can use fresh yeast - three times the amount (about 19 g).
Step 2
Take a large bowl for kneading the dough. Warm water to 98-100°F (37-38°C), it should feel pleasantly warm but not hot. Pour into the bowl. Add sugar and yeast. Stir and let sit for 10 minutes.
Step 3
During this time, the yeast should activate and form a foamy layer. If this doesn’t happen, replace the yeast.
Step 4
Add salt and the egg to the yeast mixture. Mix well.
Step 5
Start adding sifted flour in portions. Sifting enriches flour with oxygen, making the dough lighter. Stir after each addition - first with a fork, then with hands.
Step 6
When you can knead by hand, add softened butter. (If you forgot to soften it, melt it.) Continue kneading, adding more flour if necessary. The dough should be thick but not too stiff.
Step 7
Once the dough stops sticking to the sides and becomes smooth, stop kneading. Cover the bowl with plastic wrap or a towel. Place in a warm spot for 3 hours to rise (for example, inside an off oven).
Step 8
Every hour, punch down the dough. It should rise well.
Step 9
After 3 hours, punch down the dough one last time and begin shaping.
Step 10
Divide into pieces of about 80 g each. Roll into balls. You should get about 8 pieces plus a small extra one. Cover with wrap and let rest for 15 minutes.

Meanwhile, prepare the topping and sauce. Use boiled sausage, pickles, and cheese - or toppings of your choice. For the sauce, mix tomato paste with an equal amount of water. You can also use ketchup or tomato sauce.
Step 12
Cut the sausage into small cubes or strips.

Slice the pickles in the same way.

Grate the cheese on a coarse grater. Any good cheese works—hard, semi-hard, or mozzarella.
Step 15
Roll the rested dough balls into thin circles about 6 inches (15 cm) in diameter.

Place on a parchment-lined baking sheet. Brush with tomato sauce.
Step 17
Top with sausage and pickles.
Step 18
Sprinkle with grated cheese.
Step 19
Preheat the oven to 390°F (200°C), top-and-bottom heat. Bake pizzas 15-20 minutes until browned and the cheese is melted. While the first batch bakes, prepare the second.
Step 20
Serve hot straight from the oven. You can also reheat cooled pizza in the microwave. Enjoy!
