Scalded Crepe Batter with Milk
One of the very best batters for crepes. I am sharing a recipe for very tasty crepes made with scalded batter. The whole secret of this batter is the addition of boiling water. And now I will tell you how to do it.

Step 1
To make scalded batter for crepes, prepare all the necessary ingredients. Bring the water to a boil, because you need to add boiling water to the batter. The milk can be any fat content. Use larger eggs. If the eggs are very small, you can take 1 extra egg. Sift the flour through a fine sieve to aerate it. Adjust the sweetness of the crepes to your taste. Usually 3-4 tablespoons of sugar are enough.

For making the batter, take a deep bowl so the mixture does not splatter while you are stirring. Combine the eggs and sugar in the bowl.

Add the vegetable oil and milk to the bowl. Mix with a whisk.

Then add the sifted flour, baking soda, and salt. Stir the flour into the batter a little with a whisk, then you can turn on the mixer to make the batter more uniform.
Step 5
When the flour is fully mixed into the batter, add the boiling water and immediately stir everything well. Thanks to the boiling water, the flour in the batter will be scalded, and the finished crepes will turn out more elastic and tender. Let the batter rest for about 10 minutes. During this time, it will infuse and become slightly thicker. Be ready for the fact that you may need a little more or a little less flour than the recipe states. Do not focus only on the exact flour amount, but on the consistency you want.

The finished batter should be fairly thin. However, you can adjust this to your taste by increasing or reducing the amount of liquid. I prefer thin crepes, so I make them with a thinner batter.
Step 7
Cook the crepes in a crepe pan and serve them with any toppings, such as jam or sour cream. It is enough to grease the pan only before the first crepe. Crepes made with scalded batter turn out quite sturdy, so you can wrap any fillings in them. Cook and enjoy!
