Savory Fried Pies (Seafood Stuffed)

Preparation
Step 1
To prepare the filling, heat coconut oil in a wide saucepan over low-medium heat. Add the onions, bell pepper, and jalapeño, and sauté until the onions become translucent and the peppers soften.
Step 2
Sprinkle in the flour and continue cooking for about 5 minutes, stirring constantly, until the flour turns a light golden brown.
Step 3
Add the crawfish and crab meat along with 3 tablespoons of water. Cook for 10 minutes, allowing the flavours to combine. Taste and adjust the seasoning if needed. Remove from the heat and let the filling cool completely before assembling the pies.
Step 4
While the filling cools, prepare the dough. In a bowl, combine the flour, baking powder, sugar, and salt. Rub the butter into the flour mixture using your fingers until it resembles coarse crumbs.
Step 5
Gradually add water a little at a time, kneading after each addition, until a soft and pliable dough forms. The dough should be smooth and not too sticky or too firm. Let it rest for 5 minutes before using.
Step 6
To assemble the pies, divide the dough into 12 equal portions. Roll each piece into a circle and place about 2 tablespoons of filling onto one half. Fold the other half over to enclose the filling. Lightly brush the edges with water, then seal by pressing with a fork to create a tight edge.
Step 7
Heat oil in a deep pan or fryer to 350°F (about 177°C). Carefully place the pies into the hot oil, making sure not to overcrowd the pan. Fry each pie until golden brown on both sides.

Remove from the oil, drain excess oil, and allow the pies to cool for at least 5 minutes before serving.
