Sausages with Cheese in Yeast Dough
Soft, fluffy yeast dough wrapped around sausages and melting cheese makes a simple yet attractive savory bake. Serve these pastries warm or cooled as a snack, appetizer or party treat.

Preparation
Step 1
Prepare the ingredients. Bring the eggs to room temperature beforehand so the dough rises well during proofing and baking. The milk and butter will be warmed separately, so they do not need to be taken out of the refrigerator in advance.
Step 2
Warm the milk until noticeably warm but not hot, as excessive heat can kill the yeast. Add the sugar and yeast, stir and leave at room temperature for 10–15 minutes, until a foamy layer forms on the surface.
Step 3
While the yeast activates, sift the flour into a deep bowl. Add the salt and eggs, reserving one egg yolk for brushing later. Mix the flour and eggs together.
Step 4
Pour in the activated yeast mixture and mix again with a fork. Depending on the flour, you may need slightly more or less than specified.
Step 5
Melt the butter using your preferred method. Let it cool until warm, then pour it into the flour mixture. Begin mixing the dough with a fork, then knead by hand.
Step 6
Add a little more flour if necessary, judging by the consistency of the dough. It should eventually stop sticking to your hands but remain soft, so avoid adding too much flour. Shape the finished dough into a ball, place it in a bowl and cover with a towel.
Step 7
Leave the dough in a warm, draft-free place for 1 hour, or until approximately doubled in volume.
Step 8
Transfer the dough to a work surface and divide it into 8 equal portions. Shape each portion into a smooth ball by rolling it gently under your palm.
Step 9
Roll each ball into a circle slightly larger than a sausage and about ⅛–¼ inch thick. Cut the cheese into thin slices and wrap a slice around each sausage. Place the sausage in the center of a dough circle and make symmetrical cuts from both sides of the dough toward the sausage.
Step 10
Wrap the sausage by crossing the cut strips of dough over it one at a time, alternating between the left and right sides.
Step 11
Arrange the shaped pastries on a baking sheet lined with parchment paper and leave to proof for 15 minutes. Lightly whisk the reserved egg yolk with a fork, then brush it over the dough.
Step 12
Bake in an oven preheated to 350°F for approximately 20 minutes, or until the dough is golden brown. Remove from the oven and allow to cool slightly before serving.
Step 13
Serve the sausages with cheese in yeast dough warm or cooled.
