Sausages in Kefir Dough in the Oven

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml

Preparation
Step 1
Use kefir of any fat content and refined odorless oil. I indicated sausages in grams; about 16 pieces is a good amount.
Step 2
Heat water to ~38°C (100°F), pleasantly warm but not hot. Pour into a large bowl for mixing the dough. Add sugar and yeast, stir, and leave on the table for 15 minutes.
Step 3
The yeast should activate and form a foam cap. If not, use another batch. Water temperature is crucial: too hot kills the yeast, too cold keeps it dormant.

In a separate bowl, pour warm kefir. You can slightly warm it in a microwave or bain-marie. Add an egg and salt, whisk together. Wash eggs beforehand to avoid bacteria.
Step 5
Pour the kefir mixture into the yeast mixture and stir.
Step 6
Gradually sift in flour, mixing after each addition. Start with a fork, then knead by hand. Adjust flour amount as needed. The dough should be smooth, elastic, yet soft.

Add vegetable oil at the end and incorporate. Dough will stop sticking to hands and pull from sides. Shape into a ball, cover, and place in a warm, draft-free place to rise ~1.5 hours, until doubled in volume.
Step 8
Punch down the dough, let rest 10 minutes. Work with half at a time if large.
Step 9
Roll the dough on a floured surface into a rectangle ~1.5 cm thick.

Cut into 2 cm strips.
Step 11
Remove sausage casings. Wrap each sausage with a dough strip spirally. Place on a baking sheet lined with parchment, leaving space between.

Beat an egg yolk. Brush the dough on top with a pastry brush.

Bake in a preheated oven at 200°C (390°F) for 20-25 minutes, until golden.
Step 14
Let cool slightly and serve warm. Optionally, add sauces. Enjoy!
