Sandwiches with Sprats, Mayonnaise, and Garlic on White Bread

A simple quick snack for any table! Sandwiches with sprats, mayonnaise, and garlic on white bread are very popular at festive gatherings. Tomatoes and greens add freshness, while garlic gives a sharp note that pairs perfectly with smoked sprats.

Preparation
Step 1
Instead of regular white bread, you can use a wheat baguette or rye bread. It’s best to buy pre-sliced bread to save time and for evenly cut slices that look better on the table. Tomatoes can be substituted or complemented with other vegetables.
Step 2
Remove the sprats from the can and shake off excess oil. To make the dish cheaper, you can replace whole sprats with store-bought sprat pâté.
Step 3
Wash the tomatoes, pat dry, and cut into slices or wedges. Choose juicy but firm tomatoes. Soft ones lose shape during cutting and preparation, ruining the dish’s appearance.
Step 4
Wash dill and parsley, pat dry, and chop finely. You can replace or complement them with other greens such as cilantro, green onions, or a mix of herbs.
Step 5
In a small bowl, mix mayonnaise with pressed garlic and chopped greens. Stir well. I like to mash part of the greens beforehand so they release juice, tinting the mayo a light green.
Step 6
Spread the garlic-herb mayonnaise on the bread slices. Optionally, you can toast the bread in a toaster or dry skillet, but let it cool to room temperature before spreading mayonnaise, or it will melt.
Step 7
Place 1-2 slices of tomato on top.
Step 8
Add 2 smoked sprats on each sandwich. Garnish with fresh herbs and serve. Enjoy!
