Sandwiches with Egg and Cheese

Preparation
Step 1
Besides a baguette or loaf, you can use any bread you like or have on hand. Whole grain or dark bread works well. You may decorate the sandwiches or leave them plain. I had cucumber and red caviar.
Step 2
Boil the eggs in advance and let them cool. Peel and grate them on a medium grater. A coarse grater is not recommended, as large pieces may fall out. This ensures a smooth mixture.
Step 3
Grate the cheese on a medium grater. I used semi-hard cheese, but processed cheese works too.
Step 4
Wash and dry the herbs. I used dill, but any fresh herbs are fine. Remove tough stems and finely chop the leaves.
Step 5
In a bowl, combine the grated eggs, cheese, and chopped herbs. Peel and crush garlic using a press, knife, or grater. Add it to the mixture along with mayonnaise. Season with salt and pepper, but start with a small amount and adjust later.
Step 6
Mix everything until smooth.
Step 7
Slice the bread thinly. If using a loaf, you can cut uniform rounds using a glass or cup. Toast the bread on a skillet or grill until crispy. You may add butter, but frying without it works too.
Step 8
Spread the egg-cheese mixture on the bread. You can also add toppings like smoked sausage, sprats, cucumbers, tomatoes, or olives.
Step 9
I decorated my sandwiches with cucumber roses, caviar, and herbs.

Serve the sandwiches. Enjoy!
