Salmon Sandwiches for the Festive Table

Step 1
Start by making the pesto sauce. You can save time by using store-bought pesto. For the sauce, use either large-leaf or small-leaf basil. Traditionally, pesto is made with olive oil, but you can use any oil you like.

Place the washed basil, olive oil, garlic clove, salt, and pepper into a blender. Blend until smooth.
Step 3
Prepare the rest of the ingredients. You can replace white wheat bread with whole grain or another type to your taste. Lightly salted salmon can be substituted with another type of red fish, salted or smoked. The butter should be at room temperature, so take it out of the fridge in advance.

Slice the salmon thinly. If you have pre-sliced fish, it will save time. If using a whole fillet, slightly freeze it before slicing for easier handling.

Cut the tomatoes in half and slice them thinly. Choose firm yet juicy tomatoes; soft ones lose shape and can ruin the dish’s appearance.

Slice the mozzarella ball thinly. Use brined mozzarella (not pizza mozzarella). Pat it dry with a paper towel after removing it from the brine.

Spread a thin layer of room-temperature butter on each slice of bread.

On one side of each slice, place a piece of lightly salted fish.

Next to the fish, add a slice of mozzarella.

Place tomato slices on top of the cheese.

Drizzle a little pesto sauce over the sandwiches.

Garnish with sesame seeds and fresh basil. Black sesame looks especially elegant on white cheese. Serve immediately. Enjoy!
