Preparation
Step 1
How do you cook homemade salmon fish soup from the head and tail? Prepare the necessary ingredients. You can use any red fish. Saffron also works very well as a spice.

Remove the gills from the salmon and cut off the fins. Cut the fish into pieces. Rinse the salmon very well under cold water. Thoroughly rinsed fish is the key to a clear broth.
Step 3
Place the fish in a pot, cover with cold water, and add black peppercorns and allspice. Put the pot over heat.
Step 4
Bring the contents of the pot to a boil, removing the foam that forms. Cook the fish over low heat for about 25 minutes. Fish soup must be cooked over low heat at a gentle, steady simmer; otherwise, the fish will simply overcook.
Step 5
Wash the carrot, peel it, and cut into small cubes. You can also grate it on a coarse grater.
Step 6
Peel the onion, rinse it in cold water so it does not sting your eyes, and cut into small cubes.
Step 7
Peel the potatoes, wash them, and cut into large cubes.
Step 8
Remove the fish from the broth, let it cool slightly, and separate the meat from the skin and bones.

Strain the broth through a sieve and put it back over heat.

When the broth comes to a boil, add the potatoes. Bring the broth back to a boil and cook the potatoes over low heat until half-done, about 8–10 minutes.
Step 11
Add the carrot and onion to the broth. Cook the fish soup over low heat for another 5–7 minutes. Add salt to taste. The carrot and onion can be fried beforehand in any vegetable oil; this will make the soup more filling. I prefer to cook fish soup without frying the vegetables.

Wash the parsley and chop it finely.

Place the fish into the pot.

Add the chopped parsley and bay leaf to the fish soup, then mix. Cook the fish soup at a gentle simmer for about 3 minutes.
Step 15
The homemade salmon fish soup is ready. Remove the pot from the heat, let it stand covered for about 10 minutes, then serve. Enjoy!
