Salad with Red Caviar

Preparation
Step 1
Boil the potatoes and eggs in advance, then let them cool. Wash and dry cucumbers and dill.
Step 2
How to boil potatoes in their skins? Wash them well, place in a pot with cold water, and cook over low heat. After boiling, cook for 20-25 minutes depending on size and variety. Check doneness with a sharp knife - it should pierce easily. Cool completely, peel, and dice.
Step 3
Dice the cucumbers. Taste them first to make sure the skin isn’t bitter - a bitter cucumber can spoil the salad. If the skin is tender, unblemished, and not bitter, you don’t need to peel it.
Step 4
How to make hard-boiled eggs? To avoid cracking, place eggs in cold water and cook over low heat. Boil for 9 minutes after water begins to boil, then drain and cool in cold water. The shell will peel off easier. Dice the eggs. Set aside the whites from two eggs for garnish.

Finely chop the dill.

Mix dill with mayonnaise. You can also use plain mayonnaise without herbs.

I served this salad layered with a cooking ring, but you can also just mix it in a salad bowl or arrange it with a ring after mixing. Place a ring on a plate. First layer: potatoes, pressing lightly with a spoon.
Step 8
Spread the dill-mayo over the potatoes. Add a layer of red caviar (don’t cover this layer with mayo).
Step 9
Add the diced cucumbers, spreading them with mayo as well.
Step 10
Place the diced eggs on top.

Spread the eggs with mayo.
Step 12
Grate the reserved whites finely and sprinkle over the salad.
Step 13
Remove the ring. Garnish the top with extra caviar and herbs if desired. Serve immediately. Enjoy!
