Salad with Processed Cheese and Garlic

Preparation
Step 1
Use large eggs. If your eggs are small, take 4 instead. I used category 1 eggs. The processed cheese should be firm, not soft. If you can’t find firm processed cheese, you can replace it with processed smoked cheese.
Step 2
Grate the processed cheese on a medium or large grater. To make grating easier and prevent the cheese from sticking, chill it in the freezer for 20 minutes beforehand. You can substitute with any other cheese of your choice.
Step 3
Boil the eggs hard (about 10 minutes after boiling), cool them, peel, and grate on a large grater.
Step 4
Peel a small carrot and grate it. The finer you grate the carrot, the more delicate the salad will be. You can substitute raw carrot with boiled carrot, or skip carrot altogether.
Step 5
In a salad bowl, combine the grated eggs, cheese, carrot, pressed garlic, salt, and pepper.
Step 6
Dress the salad with mayonnaise and mix well. Adjust the consistency to taste - if it’s too dry, add a little more mayonnaise. Before serving, refrigerate for 30 minutes.
Step 7
Garnish the salad with fresh herbs and serve. Store any leftovers in an airtight container in the refrigerator for no more than 3 days. Enjoy!
