Salad with Liver and Eggs

If the cucumber skin is not tough, damaged, or bitter, there's no need to peel it. You can use not only mayonnaise as dressing, but also sour cream or plain yogurt. They can be used alone or mixed with mayonnaise in any ratio to your taste—this will reduce the calorie content of the dish.
Preparation
Step 1
You can use any type of liver - not just chicken, but also pork, beef, or even cod liver. Only the cooking time will vary. Boil the eggs hard and let them cool.

Fresh, chilled liver is best. If using frozen liver, thaw it first. Bring a saucepan of water to a boil, salt it, and add the liver. Boiling in already hot water (not cold) helps keep the liver juicy and tender. Boil chicken liver for no more than 10 minutes; cut pork or beef liver for about 20 minutes. Then remove and let cool.
Step 3
While the liver is cooling, marinate the onion. Peel and slice it into quarter rings or smaller, as preferred.
Step 4
Put the onion in a bowl, pour in clean cold water, add vinegar (any kind you like), and some sugar. Stir and let it sit on the counter for 20 minutes. Then strain the onion using a sieve to remove liquid.
Step 5
Grate the cooled liver using a coarse grater.

You can make this salad in a bowl, but this recipe uses a plating ring. Place the ring on a flat plate. First, add the grated liver, pressing it down with a spoon or a special press. Spread a layer of mayonnaise over it, then add the pickled onions.
Step 7
Cut the cucumber into small cubes.
Step 8
Add the chopped cucumber as the next layer, press it down, and spread with mayonnaise.
Step 9
Peel the cooled hard-boiled eggs. Set aside two yolks for garnishing. Grate the remaining whites and whole eggs on a coarse grater.
Step 10
Place the grated eggs over the cucumbers, press gently, and spread the rest of the mayonnaise.
Step 11
Finely grate the reserved yolks on top of the salad using a fine grater. Chill the salad in the fridge for a couple of hours to allow the flavors to blend.
Step 12
Carefully remove the ring and serve. Enjoy your meal!
