Step 1
Prepare the ingredients. Use soft smoked sausage like cervelat. Choose natural beans without added sauces, either canned or cooked at home. The same applies to Korean carrots and croutons. Rye bread croutons work best.
Step 2
Peel the sausage casing and cut it into pieces. The size and shape can vary. I usually match the croutons—if they’re square, I cut everything into cubes; if they’re long, I cut ingredients into strips for a more aesthetic salad.
Step 3
Cut the cucumbers the same way. Be sure to taste them first to check for bitterness. If the skin is not tough or bitter, peeling isn’t necessary. Since my croutons are in strips, I cut the cucumbers the same way.
Step 4
Place the sausage and cucumbers in a salad bowl. Drain the beans and rinse them under running water before adding them to the salad. Add the Korean carrots—if they are too long, cut them shorter. Add the croutons.
Step 5
Dress the salad with mayonnaise and serve immediately. This is important because the croutons can become soggy and lose their crunch. Enjoy!
