Salad with King Prawns

Step 1
You can replace king prawns with any other type of shrimp to your taste, or even add seafood like mussels or squid. Use regular or cherry tomatoes. I use cherry - they make the salad more appealing. You can also adjust or swap vegetables as you like.
Step 2
Cut cherry tomatoes in halves. If using a regular tomato, cut into wedges. Tomatoes should be firm. Soft ones won’t hold shape, turning into mush and spoiling the presentation.
Step 3
Peel and finely chop the garlic with a knife or press it through a garlic press.
Step 4
Wash, dry, and finely chop parsley. You can replace parsley with dill or another herb of your choice.
Step 5
Place the chopped tomatoes, garlic, and parsley in a bowl. Season with salt, pepper, and a pinch of sugar. Mix well and leave to marinate.
Step 6
Use a ready-made salad leaf mix or prepare your own from the greens you have. I used a French mix (arugula, chard, lamb’s lettuce, spinach). A delicious combination.
Step 7
Clean the prawns by removing heads and shells. Make a cut along the back and remove the dark vein. Rinse and dry again. If frozen, thaw on the bottom shelf of the fridge beforehand. Lightly season the prawns with salt and pepper.

Heat vegetable oil in a skillet over medium heat. Fry prawns for about 1 minute per side. Remove the pan from heat and let the prawns cool. You can use any vegetable oil; I used olive oil.
Step 9
Add the prawns together with the frying oil to the bowl with tomatoes. The oil mixed with tomato juice will serve as the salad dressing. Mix everything well.
Step 10
Add the salad leaves and gently toss. Serve the salad immediately. Enjoy!
