Salad with Fried Mushrooms, Carrots, and Onions

Step 1
How to make a salad with mushrooms, carrots, and onions? Prepare the ingredients. I cook with fresh medium-size button mushrooms. You can also use frozen - sliced or whole - but you’ll need to cook them a bit longer until the liquid evaporates. Depending on the size, you can cut the mushrooms differently. Use fresh carrots and a medium onion. I used category C0 chicken eggs. Boil the eggs in advance and cool them in cold water. For dressing, I use mayonnaise; you can replace it.

Wash and peel the carrots for the salad. Cut the carrots into long thin strips or grate them using a Korean-style carrot grater. Peel the onion and slice it into half-rings, preferably thinly.
Step 3
Sort the mushrooms, rinse them under cold running water to remove debris and dirt. Pat the clean mushrooms dry and slice them. If the mushrooms are small, you can cut them into halves or quarters.
Step 4
Heat a skillet with oil and add the sliced mushrooms, carrots, and onion. Fry everything together over medium heat, stirring constantly, until the vegetables are soft. Remove the skillet from the heat and let the vegetables and mushrooms cool.
Step 5
Peel the pre-boiled, cooled eggs and cut them into large pieces. You can use quail eggs instead; then you can simply cut them in half.
Step 6
Put the chopped eggs and the cooled fried vegetables with mushrooms into a deep bowl. Dress with mayonnaise, add salt, and mix. The salad is ready. Serve for lunch or dinner. With this salad, offer potatoes and chicken dishes.
