Step 1
Prepare the ingredients. For a more colorful salad, use bell peppers of different colors if possible. Red onion works well, but you can also use yellow onion, shallots or white salad onion. Rinse all the vegetables and pat them dry.
Step 2
First marinate the onion. Peel it and cut into thin half-rings or quarter-rings. Place in a small deep bowl, pour over the apple cider or balsamic vinegar, mix and set aside while you prepare the rest of the salad.
Step 3
Cut the eggplant into strips, cubes or half-moons. Place in a bowl, sprinkle with about ½–1 tablespoon salt, mix and leave for 15–20 minutes. Then rinse and gently squeeze out the excess moisture.
Step 4
Cut the bell peppers in half and remove the stems and seeds. Slice into thin strips or half-rings. Cut the tomatoes into wedges or cubes; cherry tomatoes also work well. Place the peppers and tomatoes in a salad bowl.
Step 5
Heat the vegetable oil in a frying pan, adding a little more if needed. Fry the eggplant in batches until golden, stirring occasionally. Transfer the cooked pieces to paper towels to absorb excess oil.
Step 6
Carefully spoon some of the hot oil from the pan over the tomatoes and bell peppers, then mix.
Step 7
Add the fried eggplant and drained marinated onion to the salad bowl. Add the garlic, either pressed through a garlic press or finely chopped.
Step 8
Rinse and dry the fresh herbs, then finely chop them. Cilantro, parsley, dill or green onions all work well.
Step 9
Pour in the soy sauce and mix thoroughly. Taste and add salt if needed. You can also season with ground allspice or chili to taste.
Step 10
Serve the salad warm or chilled.
