Salad with Fried Chicken

Delicious, healthy, hearty, and very simple to prepare! Salad with Fried Chicken can be a complete dinner. Bell peppers and lettuce add juiciness and brightness. Dress with mayonnaise, sour cream, or fragrant olive oil.

Preparation
Step 1
To make the dish look more appetizing and colorful, use bell peppers of different colors if possible. First, boil the eggs hard (about 10 minutes), then cool them.
Step 2
Rinse the chicken breast and pat dry with paper towels. Slice each piece lengthwise into two cutlets. Season both sides with salt and your favorite spices. I used a pinch of smoked paprika, ground peppers, garlic powder, and dried basil. Rub the spices into the surface and let marinate for 5-10 minutes.
Step 3
Heat vegetable oil in a heavy-bottomed skillet. Fry the chicken on high heat until golden brown and fully cooked through, about 5-10 minutes. Do not overcook, or it will dry out. Internal temperature should reach 165°F (74°C).
Step 4
Transfer the cooked chicken to a plate and let it cool.

Rinse the vegetables and lettuce leaves. Peel cucumbers if necessary. Peel the eggs. Cut bell peppers in half and remove seeds and core.
Step 6
Dry the lettuce leaves well. Tear them into medium-sized pieces. Slice the cooled chicken into thin strips with a sharp knife or shred by hand. Place chicken and lettuce into a large bowl.
Step 7
Slice cucumbers into thin rounds or half-moons, and cut bell peppers into large strips or cubes. Add to the salad bowl.
Step 8
Slice the eggs into small wedges and add them as well.
Step 9
For more flavor, you may add onion. Red salad onion, thinly sliced, looks bright and appetizing. Add mayonnaise, salt, and spices to taste. You can substitute mayonnaise with sour cream or plain yogurt.
Step 10
Before serving, mix the salad well and garnish with fresh parsley or dill sprigs.
