Salad with Egg Pancakes and Cucumber

Made with simple ingredients, delicious and filling. No hassle! The salad with egg pancakes and cucumber is perfect for any meal! This dish is also great for a festive table, as it takes little time to prepare, and you won't be left hungry!

Preparation
Step 1
Prepare the ingredients. You can use any part of the chicken, I’m using fillet. If using frozen chicken, thaw it in advance. You can adjust the proportions of ingredients to your taste. You can make the mayonnaise for the salad yourself.

Rinse the chicken fillet under running water. Fill a pot with enough water to cover the meat completely (about 1 liter). Bring the water to a boil. Once boiling, add the chicken fillet, salt, and pepper to taste. Reduce the heat and cook the chicken until fully cooked (about 20-25 minutes). Once cooked, remove the meat from the pot and let it cool on a plate.
Step 3
While the chicken is cooking, prepare the egg pancakes for the salad. Crack all the eggs into a bowl, add salt and ground black pepper, and whisk well. To prevent the pancakes from being too fragile, add a little flour to the mixture. Stir well to remove any lumps. You may need more or less flour depending on the consistency.
Step 4
I fried the pancakes in a special non-stick pan without oil. If you don’t have a non-stick pan, grease it with oil. Fry the pancakes on both sides until golden brown. Once done, transfer them to a plate and allow them to cool completely.
Step 5
Once the chicken fillet has cooled, place it on a cutting board and slice it into small strips along the grain. The salad will look neat and beautiful if all the ingredients are cut into uniform pieces.
Step 6
Cut the egg pancakes in half and roll each half into a tube. Slice them into thin strips of approximately equal length.
Step 7
Rinse the cucumbers under running water, dry them, and slice them into thin sticks.
Step 8
Peel and slice the onion into thin half-rings or quarter-rings. I used half of the onion because my family prefers a milder onion flavor, but if you like more, you can use a whole onion.
Step 9
Transfer all the chopped ingredients to a large bowl. Add mayonnaise, salt, and ground black pepper to taste. Mix everything together. Before serving, you can garnish the salad with fresh herbs. Enjoy your meal!
