Salad with Croutons, Corn, and Beans
A hearty, aromatic meatless salad with corn and beans! This legume salad with spicy homemade croutons is very filling and fragrant. It can be served as a standalone dish or as a side dish. The dish is also meatless!

Step 1
How do you make salad with croutons, corn, and beans? Prepare all the necessary ingredients. I used canned beans and corn. However, I know many people avoid canned foods. In that case, you can use dried or fresh corn and beans and simply boil them until done. Fresh garlic is absolutely necessary here, as it gives the salad the needed sharpness. If you do not have it, you can of course replace it with garlic powder, but it is better not to.

There are many store-bought croutons available now, in all kinds of flavors. But I strongly recommend making the croutons yourself. It is simple and quick. These croutons will be useful for many dishes, or just as a snack. They are very tasty and crunchy. Thinly slice the rye bread. You can also cut it into larger pieces. I need the croutons for a salad, so I cut them into thin strips.
Step 3
Heat 100 ml / about 7 tablespoons of oil in a pan and fry the croutons until crisp. For a lighter version, you can dry them in the oven at 180°C / 356°F for about 20 minutes.

The croutons should become nicely golden brown.
Step 5
If you fried them in a pan with oil, place the fried croutons on a paper towel to remove excess oil.
Step 6
Pour the remaining oil into the same pan where the croutons were fried, and add a minced garlic clove. Cook over the lowest heat until the garlic is lightly golden. Be careful, garlic burns quickly. The garlic should release all its aroma into the oil.
Step 7
Drizzle the croutons with the garlic oil, season with salt, and mix. The tasty, aromatic croutons are ready.
Step 8
Drain the liquid from the beans and corn, then mix them together.
Step 9
Add the minced garlic. I grate it on a fine grater, but you can chop it with a knife or press it through a garlic press.
Step 10
Lightly salt the salad. Keep in mind that the croutons will already be quite salty.

Dress the salad with mayonnaise. I highly recommend using homemade mayonnaise. Or you can replace the mayonnaise with sour cream, although mayonnaise is more suitable here.

Mix the salad.

Do not add the croutons to the salad right away, as they may become soggy. I recommend sprinkling the croutons over the salad just before serving, or serving them separately alongside the salad. Enjoy!
