Salad with Chicken Breast, Cucumber, and Egg

Hearty, healthy, made from simple ingredients - for dinner or a snack! Salad with Chicken Breast, Cucumber, and Egg is simple and quick to prepare, especially if the boiled ingredients are ready. It resembles the base for okroshka, but with baked chicken instead of sausage. The salad turns out very tasty and is loved by the whole family.

Preparation
Step 1
Use chilled chicken fillet for juicier meat. If frozen, thaw first. Boil potatoes and eggs in advance and cool completely. Wash and dry lettuce, cucumbers, and herbs.

Rub the fillet with salt and paprika. You can also use other spices to taste.
Step 3
Wrap the fillet in foil, sealing edges tightly to keep the juice inside. Place the packet in a baking dish. Bake for 40 minutes at 180 °C / 355 °F. Remove from oven and cool completely. This method makes the fillet juicy and tender, but you can also use fried or boiled chicken.
Step 4
Dice cucumbers into medium cubes.

To boil potatoes in their skins: wash thoroughly, place in a pot with cold water, and bring to a simmer. After boiling, cook for 20-25 minutes depending on size and variety. Check doneness with a sharp knife - it should pierce easily. Cool, peel, and dice into cubes similar to cucumbers.
Step 6
To make hard-boiled eggs: place eggs in cold water and bring to a simmer. Boil for 9 minutes after boiling starts. Drain, cover with cold water, and cool. This makes peeling easier. Dice cooled eggs.
Step 7
Finely chop dill. You may also use green onion or parsley instead.
Step 8
Dice the fully cooled chicken fillet into cubes. The salad looks neat if all ingredients are cut into even pieces.
Step 9
Place all ingredients in a bowl. Add salt and pepper to taste, keeping in mind that mayonnaise already contains salt. Add mayonnaise and mix.
Step 10
Serve in a salad bowl or shape with a cooking ring. Place lettuce leaves on a flat plate, put the ring on top, fill with salad, press down, and gently remove the ring. Garnish with herbs. Enjoy!
