Salad with Basil, Tomatoes, and Cheese

Step 1
The main ingredient in this salad is tomatoes. During vegetable season, they are juicy, aromatic, meaty, and very tasty! In winter, it’s better to prepare the salad with cherry tomatoes or use both kinds. Cherries have a sweet, rich taste that adds a special note. So, wash the tomatoes and basil sprigs, peel the onion, and rinse it under running water.

Cut the tomatoes into small wedges. Slice cherry tomatoes in half, and leave the smallest ones whole.
Step 3
Slice the onion (I used shallots, but you can use any type) into thin strips or half rings, whichever you prefer.
Step 4
Place the tomatoes and sliced onion into a deep bowl or salad dish.
Step 5
Add any soft cheese to the salad (I used curd cheese, but you can also use cottage cheese, bryndza, feta - your choice). You can adjust the amount. Finely chop the washed and dried basil and add it to the salad as well.
Step 6
Dress the tomatoes with cheese or cottage cheese using vegetable oil (olive or canola oil works great, but any oil of your choice will do). Add salt to taste and sprinkle with ground black pepper.
Step 7
Before serving, mix the salad well and let it rest for about 5 minutes. During this time, the tomatoes will release juice, which will be enriched with the flavors of basil and onion.
