Advice
You can replace white wine vinegar with apple cider vinegar, and walnuts with pecans, pine nuts, or other nuts to your taste.
Preparation
Step 1
I used olive oil as the base, but you can substitute it with sunflower oil. Unrefined oil works especially well. If your honey is crystallized, melt it in the microwave or over a water bath.
Step 2
Peel the garlic and press it through a garlic press or grate finely.
Step 3
In a small bowl, combine olive oil, wine vinegar, lemon juice, liquid honey, mustard, minced garlic, salt, and pepper. Whisk everything well until smooth.
Step 4
Now prepare the salad ingredients. Use baby spinach with small leaves if possible. You can replace Fetaxa with feta, goat cheese, soft cream cheese, or brined mozzarella. Walnuts can be chopped or left in halves.
Step 5
Wash and dry the spinach. Remove long stems, leaving just the leaves. If you have large spinach leaves, cut them into 2-3 pieces.
Step 6
Cut the red onion into thin half-rings.
Step 7
Boil the egg hard, cool it, peel it, and cut into wedges.
Step 8
Wash the apples, cut into quarters, and remove the cores. Slice them thinly. Cut the apples last so they don't brown. For a nice look, use apples of different colors - one red, one green.
Step 9
In a large bowl, combine spinach, red onion, apple slices, crumbled cheese, and walnuts.
Step 10
Drizzle the salad with the dressing and gently toss everything together.
Step 11
Garnish the top with the egg wedges and serve. Enjoy your meal!
