Ryazhenka Jelly Dessert with Chicory
This simple chilled dessert combines ryazhenka, baked milk, gelatin and chicory for a creamy caramel-like flavor. You can also add vanilla or cinnamon, or replace the chicory with instant coffee.

Preparation
Step 1
Prepare the ingredients. Choose good-quality dairy products; any fat content will work. Adjust the amount of sugar to taste.
Step 2
Pour half of the baked milk over the gelatin, stir and leave to bloom for 15 minutes.
Step 3
Combine the chicory with the sugar and mix. If you do not have chicory, you can use instant coffee instead.
Step 4
Pour boiling water over the chicory mixture and stir until the sugar dissolves.
Step 5
Transfer the bloomed gelatin to a small saucepan and add the remaining baked milk. Heat over low heat, stirring, until the gelatin has completely dissolved, but do not let the mixture boil. Remove from the heat as soon as the gelatin dissolves.
Step 6
While stirring constantly, pour the hot chicory mixture into the milk and gelatin mixture. Leave to cool to room temperature.
Step 7
Pour the ryazhenka into the cooled mixture and stir thoroughly until smooth.
Step 8
Pour the mixture into dessert glasses or molds and refrigerate for approximately 1–2 hours, or until completely set.
