Royal crepes

This is rich and tender pancakes made with cream of any fat content. Perfect served with caviar and herbs for a luxurious treat.

Cream for this recipe can be of any fat content, but remember, the higher the fat percentage of the products you use, the higher the calorie content of the dish will be.
Preparation
Step 1
The batter takes just a few minutes to prepare. First, gather all the necessary ingredients. Use premium flour. Large, selected eggs are best. Cream of any fat content will work; I used 20%.
Step 2
Melt 50 g of butter in advance and cool it down. You will need the rest of the butter to grease the pan.
Step 3
Crack room temperature eggs into a bowl. Add sugar and salt, and whisk until smooth.
Step 4
Pour milk and cream into the egg mixture and stir.
Step 5
While stirring constantly, pour the melted butter into the pancake batter.
Step 6
Sift the flour and gradually add it to the batter, mixing thoroughly to break up any lumps. Let the batter rest for 5-7 minutes. During this time, it will thicken slightly as gluten forms. The final batter should be slightly viscous, flowing, and smooth. If too thick, thin with milk; if too runny, add a little more flour.
Step 7
Heat some vegetable and butter oil in a pan over medium-high heat. The oil should fully cover the bottom of the pan. Pour a ladle of batter and quickly spread it evenly across the pan’s surface. Fry the pancake for 1-2 minutes until golden brown, then flip and cook the other side for the same time. Repeat with the remaining batter.
Step 8
Stack the finished hearty pancakes on a plate and serve. I served mine with red caviar and fresh herbs. Enjoy!
