Roasted Chicken in the Oven with Crispy Crust

Preparation
Step 1
Any vegetable oil will work; I use sunflower oil. Spices can be adjusted to your taste.
Step 2
Wash and pat dry the chicken. Rub it inside and out with a mix of paprika, curry, salt, and pepper.
Step 3
In a small bowl, mix vegetable oil, honey, and lemon juice until smooth.
Step 4
Now prepare the stuffing for the chicken.

Rinse prunes, pat dry, and cut into pieces. Use soft, pitted prunes. If they’re too dry, soak them in boiling water for 10 minutes.

Toast walnuts in a dry pan, then chop them with a knife.
Step 7
Wash and dry the apple. Optionally peel it, remove the core and seeds, and cut into small cubes. If it darkens quickly, sprinkle with lemon juice.
Step 8
In a bowl, combine apples, prunes, walnuts, poppy seeds, and lemon zest. Mix well.
Step 9
Stuff the chicken with the apple mixture, then sew the belly closed with thread or secure with toothpicks. Tie the legs together.
Step 10
Brush the chicken with the honey mixture.
Step 11
Place the bird in a baking dish or on a baking sheet. Spread any leftover stuffing around it. Roast in a preheated oven at 350°F (180°C) for about 1 hour 20 minutes, basting occasionally with juices. Time may vary by oven and chicken size. Wrap wings with foil to prevent burning.

Remove the chicken from the oven, cut into portions, and serve hot. Enjoy!
