Roasted Brussels sprouts with garlic butter

Preparation
Step 1
Preheat the oven to 220°C / 200°C Fan / Gas 7.
Step 2
Place the Brussels sprouts in a large mixing bowl, season with salt and pepper, and toss with the olive oil until evenly coated.
Step 3
Line a large baking tray with baking paper and arrange the sprouts cut-side down in a single layer. Roast on the middle shelf of the oven for 10-15 minutes, until they begin to soften and develop colour.
Step 4
Carefully transfer the hot sprouts back into the bowl. Add the butter, garlic, nutmeg, and Parmesan, then toss everything together so the sprouts are well coated.
Step 5
Return the sprouts to the tray and roast for a further 10 minutes, until they are golden-brown and crisp.
Step 6
Finish by sprinkling over the parsley and lemon juice, toss lightly, and serve immediately.
