Roast Muscovy Duck in the Oven in a Baking Sleeve, Whole

Preparation
Step 1
You can use chilled or frozen duck. If frozen, thaw it at room temperature. Choose large, sweet-and-sour apples; I used fragrant homegrown ones. You may replace raisins with other dried fruits such as dried apricots or prunes.
Step 2
Peel the garlic. Rinse the raisins thoroughly under running water using a colander. Wash the apples well and cut them into medium slices, removing the core.
Step 3
Rub the duck well with salt, ground pepper, and paprika on all sides. If you like, wear gloves so it doesn’t sting your hands. Season the inside lightly too.
Step 4
Stuff the duck with apple slices, raisins, and a few garlic cloves. If you prefer, sew the belly shut with thread or secure with toothpicks, but I leave it open so the extra fat drains while baking. Make small cuts on the outside and insert the remaining garlic for extra flavor and aroma.
Step 5
Wrap the duck in a baking sleeve, tie or clamp it, and leave to marinate at room temperature for 2-3 hours, or overnight in the fridge for a deeper flavor and more tenderness. Preheat the oven to 350°F (180°C) and bake for about 2-2.5 hours, depending on the duck’s size and your oven.

Serve the finished duck hot, drizzled with lemon juice or melted duck fat. Garnish with fresh vegetables and herbs. Enjoy!
