Preparation
Step 1
If using frozen duck, defrost it in advance on the bottom shelf of the refrigerator. Instead of salt and pepper, you can use your favorite spices.

Wash the quince well, pat it dry, and cut into medium slices. Peel the garlic and cut each clove into four pieces.

Prepare the marinade by mixing honey, mustard, salt, and pepper in one bowl.

Rinse the duck, dry it with paper towels, and coat it with the marinade inside and out.

Fill the duck's cavity with the sliced quince and garlic.

Wrap the prepared duck in plastic wrap and leave it to marinate in the refrigerator overnight, or up to 24 hours. This helps the duck become more tender and flavorful.

Before baking, wrap the duck’s wings and legs in foil to prevent them from burning.

Place the duck in an oven roasting bag. Seal the ends with clips and poke a few holes in the bag with a toothpick to release steam. Roast the duck in a preheated oven at 350°F (180°C) for 2–2.5 hours.

After this time, check if the duck is cooked. If needed, open the bag and bake for an additional 10–15 minutes to brown the skin.
