Roast cod with a lemon and garlic
Oven-baked cod topped with a buttery lemon, garlic, and parsley breadcrumb crust, baked until golden and crisp while the fish stays tender and flaky.

Preparation
Step 1
Season the cod with salt and pepper to taste.
Step 2
In a bowl, combine the breadcrumbs with the parsley, garlic, lemon zest, salt, and pepper. Add the butter and lemon juice, then mix everything thoroughly using your fingers until the crumbs are evenly coated and slightly clumped together.
Step 3
Place the cod in a shallow ovenproof dish. Press the buttery breadcrumb mixture firmly over the top of each piece of fish, forming an even crust that covers the surface.
Step 4
Bake in a preheated oven at 220°C / 200°C Fan / Gas 7 for 20-25 minutes, until the topping is golden-brown and crisp and the cod is just cooked through and flakes easily.
Step 5
Serve immediately while hot.
