Roast Beef Salad

Preparation
Step 1
Prepare all the necessary ingredients. I made this salad from leftover roast beef that I had cooked the day before. You can also use ready-made store-bought roast beef.
Step 2
Wash and dry the tomatoes, then cut them into wedges. Choose firm, dense tomatoes for this salad so they do not fall apart while mixing, but are not unripe. Tomatoes on the vine or plum tomatoes work especially well.

Cut the roast beef into small, even pieces or strips.
Step 4
Wash the arugula and let it dry. Tear large leaves by hand and leave the small ones whole. What can you use instead of arugula in this salad? You can replace it with any other greens to taste.
Step 5
Place the roast beef pieces, tomatoes, and arugula in a salad bowl. Drizzle the salad with olive oil and lemon juice. Add salt and pepper to taste and mix gently, trying not to crush the tomatoes. Season the salad carefully, because roast beef is usually already well seasoned along the outer edge. So first taste the meat, then add spices as needed.
Step 6
Transfer the salad with roast beef, vegetables, and arugula to a serving dish and serve. If you like, you can serve it warm. If you are making the roast beef yourself, you can cut off as much as needed for the salad from the freshly cooked warm piece. If you want to make a warm salad from yesterday’s roast beef, simply cut the meat into pieces and warm it slightly in a frying pan or in the microwave. Enjoy your meal!
