Step 1
How to cook river perch fish soup? Prepare all the needed ingredients. If your fish is frozen, take it out of the freezer ahead of time and let it thaw at room temperature until fully defrosted. If the perch is fresh, gut it and be sure to remove the gills, otherwise the soup can taste bitter. Rinse the fish well inside and out. Prepare the vegetables.

Place the perch in a pot. Add the onion (peeled) and a few peppercorns. Pour in water - the amount depends on how thick you want the soup. Put the pot on the stove and bring to a boil over high heat.

As it starts boiling, foam will appear - remove it with a spoon. Salt the broth to taste, reduce the heat, and simmer the fish for about 15 minutes.

Meanwhile, peel the potatoes and carrots and rinse them.

Cut the potatoes into small cubes. Slice the carrots into thin rounds or sticks.

Remove the cooked fish from the pot.

Strain the broth through a fine sieve or cheesecloth to remove any scales left after boiling the perch. Return the strained broth to the pot, set it over high heat, add the potatoes, carrots, and a bay leaf. After it boils, lower the heat and cook until the vegetables are tender (about 10-15 minutes).

While the soup cooks, break down the perch: carefully remove the head, skin, fins, and any remaining scales. If needed, rinse the fillet briefly under a gentle stream of water to wash off tiny scales. Divide the perch meat into serving pieces.

Add the fish fillet pieces to the pot and let it simmer for 2-5 minutes.

At the end, add finely chopped fresh herbs. You can also use a mix of dried herbs or frozen herbs. Done!
