Ricotta and Pear Cake

A tender pastry with an incredible taste – it simply melts in your mouth! Ricotta and pear cake is similar to a cottage cheese casserole, but without the tangy taste of curd. You can use any fruit or berries as a filling or bake it plain.

Preparation
Step 1
Prepare the ingredients. Use high-quality ricotta and butter without vegetable fats – this will affect the taste of the cake. You can adjust the sugar amount to your preference, depending on the sweetness of the fruit. Preheat the oven to 180°C (356°F).
Step 2
Crack the eggs into a bowl, add sugar. I always add a pinch of salt to baked goods – it acts as a flavor enhancer, making the taste more balanced and intense. Beat the eggs and sugar with a hand whisk. No need for a mixer, as the cake won’t rise significantly due to its moist and rich ingredients.
Step 3
Slightly melt the butter in the microwave – just enough to soften it, not turn it into liquid. It takes about 10 seconds. Alternatively, you can leave the butter at room temperature for about 2 hours before using.
Step 4
Add the softened butter to the beaten eggs, then add the ricotta.

Whisk everything together until smooth.
Step 6
Sift the flour into the mixture and add baking powder. Sifting is an important step as it removes impurities and aerates the flour, which improves the cake's texture.
Step 7
Gently fold the flour into the batter. The consistency should be like thick sour cream. Depending on the flour quality, you may need slightly more or less.
Step 8
Take a suitable baking dish, grease it with butter. You can even use the remaining melted butter from the bowl. Pour the batter into the dish and smooth the top. My baking dish is 23×14×6 cm (9×5.5×2.4 inches).
Step 9
Wash the pears, cut them in half, and remove the core and seeds. Slice the pear halves into thin wedges.
Step 10
Arrange the pear slices on top of the cake, pressing them lightly into the batter. You can choose any decorative pattern.
Step 11
Bake the cake in a preheated oven at 180°C (356°F) for 30 to 45 minutes. The exact baking time depends on your oven. The cake should be golden brown when done. My cake baked for 45 minutes as my oven is slower.

Let the ricotta and pear cake cool completely before serving. Enjoy your meal!
