Rich Kefir Hand Pies with Cherry Filling

Preparation
Step 1
Prepare all the necessary ingredients for making delicious hand pies with cherry filling.
Step 2
Put 500 grams of sifted flour and 10 grams of baking powder into a large bowl.
Step 3
Add 1 teaspoon of vanilla sugar and 1/3 teaspoon of salt to the bowl.
Step 4
Add 8 grams of instant dry yeast to the bowl.
Step 5
Add 50 grams of sugar to the bowl.
Step 6
Add 2 egg yolks to the bowl.
Step 7
Pour 250 milliliters of warm kefir into the bowl and knead the dough.
Step 8
Add 40 grams of butter to the bowl with the dough and continue kneading it for another 2 minutes.
Step 9
Brush the dough in the bowl with vegetable oil so that a crust does not form, cover it with a towel, and leave it in a warm place for 75 minutes.
Step 10
Place a deep frying pan on the stove, then add 20 grams of butter and 500 grams of pitted cherries to it.

Add 100 grams of sugar to the frying pan with the cherries and give it time to dissolve.
Step 12
Add 2-3 tablespoons of cherry juice to a bowl with 30 grams of starch.

Mix the ingredients well and dissolve the starch in the cherry juice.

Mix the prepared starch mixture with the cherry juice.

Pour the starch mixture into the frying pan with the cherries and the dissolved sugar.

Cook the cherries over low heat until they reach a jam-like consistency, stirring constantly.

Transfer the prepared cherry jam to a bowl and let it cool.

Grease the work surface with a small amount of vegetable oil, then place the dough on it and knead it well.

Cut the dough into pieces of approximately equal size.

Roll each piece of dough into a ball.

Flatten each ball into a round and place 1 tablespoon of cherry jam on it.

Seal the edges of the rounds with the filling well.

Shape the hand pies so that they have a neat oval form.

Place the hand pies on a baking sheet lined with baking paper and leave them to proof for 25 minutes.

After that, brush the hand pies with beaten egg and place the baking sheet into an oven preheated to 175°C (350°F) to bake them.
