Rice Porridge with Raisins and Milk

You can replace rice with any other grain if you wish. However, keep in mind the specific cooking characteristics of different grains! Cooking time may vary, becoming shorter or longer. Some grains also require pre-soaking.
Preparation
Step 1
Use non-parboiled, short-grain rice - it cooks softer and faster. Milk of any fat content will work. Adjust the amount of sugar and salt to your taste; you can increase or decrease it. You may use brown sugar, which will give the porridge a caramel flavor. Besides raisins, you can add dried apricots or other dried fruits.
Step 2
Rinse the raisins and pour boiling water over them. Let them sit for 10 minutes.

Then drain the water, rinse the raisins again under cold water, and place them in a strainer. Let the water drain off completely.
Step 4
Rinse the rice thoroughly under cool running water. Then place it in a saucepan and cover it with fresh cold water. Put the saucepan over low heat. Add salt.

Cook the rice, stirring occasionally, until the water evaporates.

Then pour in the milk, add sugar, and stir. Continue cooking the porridge over low heat, stirring constantly, for about 10 minutes.
Step 7
Taste the rice for doneness. If it’s still hard, continue cooking. You can also add more milk if the porridge turns out too thick.
Step 8
Once the rice is fully cooked, add the raisins and place a piece of butter in the porridge. Turn off the heat, stir the porridge, and cover the saucepan with a lid. Let it rest like this for 10–15 minutes.

Serve the porridge hot. Enjoy your meal!
