Refrigerator Mixed Pickled Vegetables with Cucumbers and Tomatoes

Preparation
Step 1
Prepare the vegetables. You can vary the selection, but use only vegetables permitted by the tested refrigerator-pickle recipe you are following. Rinse and clean all the vegetables thoroughly.
Step 2
Wash the jars and lids thoroughly. Cut the cabbage, cucumbers and carrots into the desired shapes, such as halves, sticks, rounds or wedges.
Step 3
Arrange the prepared vegetables attractively in the clean jars, combining different colors and shapes.
Step 4
For a naturally pink color, peel a small piece of beetroot, cut it into very thin slices and add it to the vegetables. Bring water to a boil.
Step 5
Add several garlic cloves, bay leaves and black peppercorns to each jar. Do not use the original amount of 70% vinegar essence. Prepare a hot brine according to a tested refrigerator-pickle recipe with exact quantities of water, salt and vinegar of a stated acidity. Pour the prepared brine over the vegetables.
Step 6
Close the jars with clean lids. Leave them to cool only until they can be handled safely, then place them in the refrigerator. These jars are not intended for boiling-water processing or storage at room temperature.
Step 7
Keep the jars refrigerated. Do not turn them upside down or wrap them in blankets, as this does not replace a tested heat-processing method.
Step 8
Do not replace the acidic brine with plain tomato juice. For a tomato-based marinade, use a separately tested recipe with exact acidification and processing instructions.
Step 9
Leave the vegetables to marinate in the refrigerator before serving. Serve them chilled as an appetizer or alongside meat dishes.
