Preparation
Step 1
To make pear butter, you will need only 2 ingredients: pears and sugar. You can use pears of any variety. The most important thing is that they are ripe and not firm.
Step 2
Wash the pears well under running water to remove any dirt. Then peel them, cut them in half, and remove the cores.
Step 3
Cut the peeled pears into pieces and place them in the pot in which you will cook the pear butter. The cookware can be enameled or glass. It is better not to use aluminum so that the fruit juice does not oxidize. The pear pieces can be of any size. The shape of the pieces does not matter here, because later everything will be blended.
Step 4
Sprinkle the chopped pears with sugar and cinnamon and leave them for 3-4 hours so that they release their juice. Do not add all the sugar at once. If the pears are sweet on their own, you may need less sugar than the recipe indicates.
Step 5
After the indicated time, the pears will release juice. Put the pot on the heat and bring everything to a boil. Simmer the pears over low heat for 30 minutes. During this time, the pears will become very soft and begin to break down.
Step 6
Blend the whole pear mixture with an immersion blender until smooth. You can also use a meat grinder. Then return the pot to the heat and cook over low heat for another 10 minutes. Do not forget to stir the mixture so the pear butter does not begin to burn. The longer you cook the pear butter, the thicker and darker it will become.
Step 7
Wash the jars for the pear butter well and sterilize them in any way convenient for you. This can be done in the oven, in the microwave, or over hot steam. It is enough just to pour boiling water over the lids.
Step 8
Pour the boiling pear butter into the prepared jars and close them with lids. Wrap the jars in a warm blanket and let them cool completely this way. Why wrap them in a blanket? This is necessary so that the pear butter cools as slowly as possible. As it cools this way, it will become even thicker. Store the cooled jars in a cool place. Enjoy!
