Red Fish with Spinach in Cream Sauce

Delicate, juicy, aromatic, perfect with any side! Red fish with spinach in cream sauce is quick and easy to make. Gentle cream with herbs and a slightly sweet-sour tomato taste makes it incredibly soft, juicy, and very tasty. The dish goes perfectly with any side dish.

Preparation
Step 1
You can use any red fish: salmon, keta, trout, or coho salmon. I’m using coho salmon. If you don’t have fresh spinach, frozen will work. Olive oil can be replaced with any refined vegetable oil.
Step 2
Season the fish fillets with salt and pepper on both sides. Heat olive oil in a pan and fry the fish on medium heat on both sides until lightly golden.
Step 3
Wash and dry the tomatoes. I’m using cherry tomatoes, cut in half. You can also use regular tomatoes, cut into small pieces.
Step 4
Wash, dry, and finely chop the spinach.
Step 5
Grate the cheese on a fine grater. Any cheese works - hard, semi-hard, or soft like mozzarella. The main thing is that it’s tasty, good quality, without vegetable fat substitutes, and melts well.
Step 6
In a pan, melt the butter. Add the tomatoes and sauté over medium heat for 1 minute, stirring. Remove the tomatoes from the pan.
Step 7
Pour the cream into the pan and heat it until hot. Use cream with 10-20% fat.
Step 8
Add spices and seasonings to taste, salt, and stir.
Step 9
Add grated cheese to the cream. Stir well until the cheese is fully melted. After adding the cheese, the sauce will become thicker.
Step 10
Add the spinach and tomatoes to the sauce and mix.
Step 11
Keep the sauce on low heat for 2-3 minutes. It will become thicker, and the flavor richer.
Step 12
Add the pieces of fish to the sauce. Cover the pan with a lid and simmer for another 5 minutes so the fish absorbs the sauce and spice aroma.
Step 13
