Preparation
Step 1
Prepare the ingredients. Instead of a baguette, you can use regular white bread or rye bread.
Step 2
Cut the baguette into slices about ⅜ inch thick.
Step 3
Place the bread slices in a dry frying pan and lightly toast on both sides.
Step 4
Hard-boil the eggs, let them cool and peel them. Grate on a fine or medium grater.
Step 5
Grate the cheese on a fine or medium grater as well. Use any firm, semi-firm or soft cheese that tastes good and grates easily; a simple semi-hard fermented cheese works well.
Step 6
In a bowl, combine the grated eggs, cheese and ground black pepper. Add the mayonnaise and mix well. Season with additional spices if desired. The filling can be prepared in advance and refrigerated until you are ready to assemble the sandwiches.
Step 7
Spread the egg-and-cheese mixture over the cooled baguette slices. The original recipe makes enough filling for about 6 slices.
Step 8
Place about 1 teaspoon of red caviar in the center of each sandwich. You can replace or supplement the caviar with shrimp, slices of salmon or trout, or other seafood.
Step 9
Garnish the sandwiches with fresh herbs, arrange them on a serving platter and serve.
