Raw Carrot Salad with Walnuts and Honey

Preparation
Step 1
First, gather all the ingredients from the list.

Peel the fresh carrots and grate them on a fine or coarse grater (depending on your preference). Then mix them with one tablespoon of olive oil. If you don’t have olive oil, you can replace it with vegetable oil.

You can also chop the carrots using a blender. Cut them into large chunks, place them in the blender bowl, and pulse at low speed until you get the desired texture (carrot shreds). Then mix with olive (or vegetable) oil as described in the previous step.
Step 4
Shell the walnuts, take out the kernels, and chop them with a knife. You can also use almonds, hazelnuts, or peanuts. Toast the chopped nuts in a skillet without oil over medium heat, stirring until they dry slightly.
Step 5
Transfer the carrots to a salad bowl.
Step 6
Add the chopped nuts to the carrots, pour in honey that has been gently warmed in a water bath (so it’s still warm), and mix everything thoroughly. Let the salad rest for a short while, stir again, and serve.
