Raisin Cake in a Bread Maker

Incredibly soft, tender, and airy—just perfect! Raisin cake in a bread maker turns out just as delicious as in the oven. The taste is identical, but the effort is significantly reduced. You only need to beat the eggs, and the bread maker takes care of the rest!

Preparation
Step 1
Take the eggs and butter out of the fridge in advance to bring them to room temperature. The butter should be soft. Choose seedless raisins. You can also add candied fruit, nuts, or lemon zest.

First, prepare the raisins. Rinse them thoroughly and soak them in boiling water for 10 minutes.
Step 3
Meanwhile, prepare the other ingredients. Crack the eggs into a bowl, add sugar, salt, and a pinch of vanilla. If using vanilla sugar instead of vanilla extract, add 1 teaspoon. Salt helps balance and enhance the cake's flavor. Beat the eggs and sugar with a mixer on high speed until fluffy and pale. Wash the eggs before use, as bacteria may be present on the shell.

Take the bread maker pan and insert the mixing paddle. Pour in the beaten eggs. Add the softened butter.

Drain the soaked raisins using a sieve, then place them on a paper towel and pat them dry.

Sift the flour to aerate it, which improves the cake's texture. Add the baking powder to the flour. Then, mix in the dried raisins. Keep in mind that you might need slightly more or less flour.

Place the pan into the bread maker. Select the appropriate cake baking program—the name may vary depending on your machine. My machine has a specific "Cake" mode. Check your bread maker’s manual. The baking time may also differ depending on the model, ranging from 80 to 105 minutes. Once the cycle starts, the machine will begin kneading the dough. At this stage, you can assist by scraping the dough off the sides with a spatula.
Step 8
After kneading is complete, close the lid and wait for the program to finish. When the machine signals the end, remove the pan and let the cake cool slightly.
Step 9
Carefully take the cake out of the pan.

Serve the cake dusted with powdered sugar. Enjoy!
