Preparation
Step 1
First, prepare all the necessary ingredients. Choose crab sticks with a bright red top - they’ll make the appetizer more colorful. Use semi-hard processed cheese suitable for grating. You can replace it with regular hard cheese. Use large eggs.

Grate the crab sticks on a fine grater. Set aside one-third of the grated crab sticks for decoration. To make grating easier, freeze them for 20-30 minutes beforehand.

Also, place the processed cheese in the freezer for about 20 minutes, then grate it finely.

Boil the eggs hard (about 10 minutes), cool, peel, and grate them finely.
Step 5
In a bowl, combine the grated crab sticks, cheese, and eggs. Add a garlic clove pressed through a garlic press and some mayonnaise.

Mix everything thoroughly until smooth. If the mixture seems dry, add a bit more mayonnaise. The texture should be firm but slightly sticky so it holds shape.

With damp hands, form small firm balls about the size of a walnut.

Roll each ball in the reserved grated crab sticks - this will give the appetizer its bright festive look. If preparing ahead, cover the bowl so they don’t dry out and refrigerate.

Arrange the crab stick “Raffaello” balls on a serving plate, garnish with herbs, and, optionally, pomegranate seeds. Serve and enjoy!
