Rabbit Salad with Ham, Corn, and Rice

Preparation
Step 1
Use any hard cheese, such as Gouda. Onion can be omitted if desired. Cook rice according to package instructions. Place eggs in cold water, bring to a boil, reduce heat, and cook for 13-15 minutes.

Meanwhile, drain liquid from canned corn. Place kernels in a large mixing bowl.
Step 3
Rinse half of a long cucumber and pat dry. Dice it into small cubes and add to the bowl.
Step 4
Dice ham into small pieces and add to the corn and cucumber.
Step 5
Drain the eggs, cool, peel, and grate on a coarse grater. Add to the bowl.
Step 6
Add cooked, slightly cooled rice to the salad bowl.
Step 7
Season with salt and pepper, then mix with mayonnaise. Don’t use too much or the salad won’t hold its shape. Mix well and taste; adjust salt if needed.

At this stage, you can add finely chopped onion and herbs if desired. The salad is tasty with or without them. Mix again.

On a flat oval dish, shape the salad into a rabbit’s head and body. Use disposable gloves for convenience.

Cut two small half-ovals from the cheese - these will be the ears.

Grate the remaining cheese finely. Cover the salad with a thin layer, pressing gently.

Spread cheese evenly over the entire surface of the rabbit.

Use parsley or dill to draw a line separating the head from the body.

Insert a half-toothpick into each ear.

Attach the ears to the rabbit’s head.

Cut an olive or black olive in half for the eyes. Make the nose from a small piece of ham or carrot.

Decorate the rabbit with parsley or dill. Use ham, cheese, carrot, cucumber, or olives for extra decoration.

Place the finished salad in the refrigerator to chill and set before serving.
