Preparation
Step 1
Prepare the ingredients. Use good-quality all-purpose flour. Bring the kefir, sour cream and egg to room temperature beforehand.
Step 2
Combine the room-temperature kefir, egg and sour cream in a bowl. Add the sugar, salt and yeast and whisk thoroughly until smooth.
Step 3
Add the sifted flour and knead into a soft, smooth dough that does not stick to your hands.
Step 4
If making the flatbreads for the first time, add the flour gradually and judge by the consistency of the dough. Depending on the flour and the thickness and moisture content of the kefir, you may need slightly more or less. Add it in portions so the dough does not become too firm.
Step 5
Divide the dough into 7–8 equal portions. In the original recipe, each portion weighs approximately 4 oz.
Step 6
On a lightly floured surface, roll each portion into a round flatbread approximately ⅜ inch thick. Prick the entire surface with a fork.
Step 7
Heat vegetable oil in a frying pan over low heat. Add one flatbread; it should be almost completely surrounded by the hot oil.
Step 8
Fry for 2–3 minutes on each side, until evenly golden.
Step 9
Transfer the finished flatbreads to a serving plate and serve warm or cooled.
