Quick Yeast Dough

Preparation
Step 1
Prepare the necessary ingredients. Sift the flour into a deep bowl, preferably twice. This will enrich it with oxygen and help the dough rise better. Olive oil can be replaced with any other vegetable oil you prefer.
Step 2
Add the quick-acting dry yeast and the salt to the flour to enhance the flavor of the baked goods. Since this is a recipe for quick dough, the yeast is not tested separately here and is assumed to be active from the start. If you have even the slightest doubt about the freshness of the yeast, it is safer to prepare a starter first. Add the sugar to the flour and yeast mixture.
Step 3
Add the olive oil. It will make the dough smoother. Pour in the warm water at a temperature of 37-40°C (98-104°F). The water should be warm but not scalding. Knead the dough and shape it into a ball. Be prepared that you may need more or less flour than stated in the recipe. Focus not on the exact amount of flour, but on the desired consistency of the dough.
Step 4
At first it will stick strongly to your hands, but later it will become smooth and elastic. You can use a bread machine or a mixer with special dough hooks. Leave the dough in a warm place for 1 hour. I place it in the microwave, where I warmed half a glass of water a minute earlier. Check that the size of the bowl fits the height of your microwave. The dough will rise well and may stick to the top wall.
Step 5
The dough should increase in volume by about 2 to 2 1/2 times. After 1 hour you can continue working with it, but if you have another 20 minutes to spare, punch the dough down with your hand and leave it in a warm place for that time.
Step 6
From this quick yeast dough you can make almost anything: from classic Italian pizza and fried hand pies with any filling to sweet cinnamon buns, khachapuri, and even homemade hot dogs. Thanks to its elasticity and lean base, it is ideal both for deep-frying, such as doughnuts, and for baking in the oven, such as stuffed pies, sweet cheese buns, or samsa. Enjoy your meal!
