Quick Marinated Tomatoes in a Pot

Preparation
Step 1
You can use tomatoes of any variety. For aromatic herbs, parsley, dill heads, basil, oregano, cilantro, or blackcurrant leaves work great.
Step 2
Peel the garlic cloves. Rinse the tomatoes, herbs, and garlic in cold water.
Step 3
Place a dill head and a few parsley sprigs at the bottom of the pot. Crush the herbs with your hands to release more aroma.
Step 4
Cut each tomato in half and remove the stem area. Slice the halves into small wedges as shown in the photo.
Step 5
Place some of the wedges in the pot.
Step 6
Make a layer of dill and parsley. Crush the garlic cloves with a knife or cut each into 2-4 pieces. Add the garlic to the pot.
Step 7
Add the remaining tomatoes as the next layer.
Step 8
Finish with a layer of dill, parsley, and a couple of bay leaves. Add a pinch of ground black pepper. You can also use a few whole black or allspice peppercorns.
Step 9
In a separate container, prepare the brine. Dissolve the salt and sugar in 1 liter (about 4¼ cups) of water. Add the vinegar. Taste the brine and adjust if needed. Pour the brine over the tomatoes in the pot.
Step 10
To keep the tomatoes and herbs submerged, place a small flat plate on top as a weight.
Step 11
Cover the pot with a lid and leave the tomatoes to marinate for 3-5 hours at room temperature.
Step 12
Before serving, refrigerate the pot for 30-60 minutes to chill.
