Slice young zucchinis (no need to peel) into rounds, or into half-rounds if using a large zucchini. Layer the zucchini slices in a prepared container, sprinkling each layer with chopped herbs and minced garlic.
Step 2
Prepare the brine: boil water with salt and sugar until dissolved. Pour the hot brine over the zucchini. Let it cool, then refrigerate for 12 hours. After 12 hours, your quick lightly pickled zucchini will be ready to enjoy. Bon appétit!
